They served the same thing pretty much every day, and eating out can get unhealthy and expensive. By week three, I was tired of it. So, I totally understand how hard it can be to find something decent to eat while living in a dorm.

That’s why I’ve carefully selected these 24 easy recipes to make in your college dorm, all made with a rice cooker. I chose a rice cooker because it’s hands-free, easy, and you can let it cook your food while you study (or whatever busy students are up to these days)! Mix to combine. Set aside to marinade while you prep the rice. Wash yo rice! Do this straight in the rice cooker pot for efficiency. Top up with water. I’m using brown rice, usually I use white rice. Brown rice needs a bit more water – but I stick to a cup and offset the extra liquid with the excess marinade. Top rice with all of the chicken, spread in an even layer. Close lid and turn the rice cooker on! Once the rice is cooked, carefully open lid and add cheese. Close back lid for about 2-5 minutes so residual heat can melt the cheese. Garnish, mix mix and EAT! Best served while cheese is still ooey gooey. Rice Cooker Oyakodon 2 servings Ingredients: – 1 cup rice + 2 cups water for cooking – 1 lb chicken thigh, diced – 1/4 yellow onion, thinly sliced – 1 tablespoon soy sauce – 1 teaspoon hondashi – 1 teaspoon mirin – Pinch of sugar – 2-3 eggs – Green onions and sesame seeds for garnishing Instructions: 1. Side note: When I say it’s emerged more as a popular food I mean in the states… it’s definitely been a popular thing in Japan for a while! 😂 Was anyone else embarrassed to tell people their favorite food when they were a kid because they thought it was a weird, obscure food? Seems so silly to me now… like, it’s just food??? I feel like that was me with a lot of Japanese foods but I’m glad I’m past that now bc Japanese food is too good to hide from the world hahahah Rice Cooker Spicy Miso Ramen Serves 2 Ingredients: * 5 cups chicken broth * 2 cloves garlic, minced * 1 teaspoon ginger, grated * 1 tablespoon hondashi * 2 tablespoons soy sauce * 3 tablespoons miso paste * 1 tablespoon gochujang (optional; for spice) * 2 servings of ramen noodles * 1 tablespoon sesame oil * Toppings (choose your favorites): sliced green onions, soft-boiled eggs, chicken or pork, nori, sliced bamboo shoots, corn kernels, mushrooms, etc. Instructions: 1. To a rice cooker, add your chicken broth, garlic, ginger, and hondashi. Turn on Slow Cook setting for 15 minutes. 2. Add in dashi and bone broth, and bring to a simmer. 3. Stir in soy sauce, miso paste, and gochujang until well combined. 4. Add in the ramen noodles (and corn if you are adding some) and close rice cooker lid. Turn on Slow Cook setting again and cook for about 5-6 minutes, or until noodles are cooked all the way though. 5. Divide the cooked noodles into serving bowls. 6. Ladle the hot broth over the noodles. 7. Add your desired toppings. Some popular options are sliced green onions, soft-boiled eggs, sliced cooked chicken or pork, nori seaweed, sliced bamboo shoots, corn kernels, spinach, mushrooms, etc. To cook the chicken, I simply grilled 1 chicken thigh (per serving) for 5 minutes on high heat on each side, with 1 tablespoon of soy sauce added after flipping twice (2 tablespoons total). Use about 2 tablespoons less than the regular amount of water you normally use when cooking rice. For me, that’s 1:1 ratio but it differs between rice cookers and rice) – 2 tablespoons gochujang (adjust to your desired spice level) – 2-3 boneless chicken thighs, cut into bite-sized pieces – 1 cup peas & carrots – 2 cloves of garlic, minced – 1 tablespoon ginger, minced – 2 eggs – 2 tablespoons soy sauce – 1 tablespoon sesame oil – Salt and pepper to taste Instructions: 1. Begin by washing your rice. In the rice cooker, add the rice and water, garlic, ginger, and gochujang. 2. Use your rice cooker paddle to mix the gochujang with the rice (it’s ok if there’s still chunks of gochujang). 3. Place the chicken pieces on top of the rice mixture, followed by the peas & carrots. 4. Close the rice cooker lid and cook on the regular white rice setting until the rice is cooked and the chicken is tender (this takes me ~20-25 minutes but varies between rice cookers). 5. Recipe below! Rather than show yall the same canh i made in my tiny rice cooker, im sharing another childhood favorite of mine! Canh mong toi! A lot of the simpler canh dishes i grew up with use the same seasonings: salt, pepper, chicken/mushroom powder, and fish sauce. “Recipe” (appx what i used) – 1L water – 1-2tsp mushroom/chicken powder – 1-2tsp fish sauce – salt and pepper – minced garlic – shrimp – dried shrimp 1. Mince the shrimp and season with salt and pepper. 2. Heat up the pot with some oil. Add the garlic, shrimp, and dried shrimp. Closing the lid between ingredients helps retain heat/give the pot a chance to reheat 3. Add the water and bring to a simmer before adding your spinach 4. Braising liquid -150mL water -1-2 tsp chicken powder -1tsp sugar -1-2tbsp soy sauce -1/2tbsp dark soy sauce Pan fry your firm todu cubes. Add the vegetable of your choice and braising liquid. Put the lid on and bring to a boil. Adjust seasoning to taste and continue cooking to vegetables are fully cooked.
